Kids Cooking Thursday: Anzac Biscuits

Master Two made Anzac Biscuits at kinder this week. Unfortunately I'd left my phone at home on the charger, so I don't have any photos of them being made, but Master Two did a great job mixing with his giant wooden spoon. He wasn't interested in rolling the mixture into balls, but he was quite happy to put the ones I rolled on to the paper lined tray for me. We only made half batches, because there were a few of us, and we got to make our own tray, but here is the recipe we used, enough for a full batch.

Anzac Biscuits
1 cup plain flour
1 cup rolled oats
1 cup brown sugar
½ cup coconut
125 g butter
2 tablespoons golden syrup
1 tablespoon water
½ teaspoon bicarbonate of soda

Sift the flour into a bowl. Add the sugar, rolled oats and coconut.
Melt the butter in a saucepan and add the golden syrup and water.
Stir the bicarbonate of soda into the liquid mixture.
Add the liquid to the dry ingredients and mix thoroughly.
Place walnut-sized balls of mixture on a greased tray and bake at 175°C for 15-20 minutes.
Biscuits will harden when cool.

I like the addition of coconut here, it's quite interesting. I will definitely try this one. I hope you'll come up with some more Anzac biscuits recipes. My kids simply love it. Although it seems like they're still not interested in helping me out in the kitchen, lol! Anyway, thanks for sharing this.
I love the pictures by the way, I missed the days when my twins were only that big, lol!
