Chicken Quesadillas


Master Five requested KFC for dinner tonight, specifically the new Melts, so I thought I'd indulge him since it's the weekend. Miss Three had a birthday party to go to this afternoon, at one of those kids indoor playground type places, and that was loud and draining, so I was in the mood for some easy cooking.

Take some chicken, fry it up. This can be anything from crumbed tenderloins to spiced breast or thigh, whatever your taste and budget requires. Slice the cooked chicken into bite sized pieces.

Lay out a tortilla (or two) for each person. Top half the tortilla with diced tomato, a big handful of cheese and some salsa. Don't be skimpy with the cheese, this is essentially a toasted cheese sandwich after all (just mexican style). Top with a fair share of the chicken pieces, and fold the top over.

Now comes the tricky (!) bit. Place the folded tortilla into the frypan - make sure it's well oiled. (Spray oil comes into it's own here!) It may be easier, or quicker at least, to do two at once. Fry till golden on one side, the flip over and do the same on the other. This takes a little manoeuvring to make sure the fillings don't fall out. Watch for stray bits of cheese, they are a pain to scrub off the pan afterwards.

Then, simply serve and enjoy. May be a little trickier than baking them in the oven, but this way, instead of brittle, dry tortillas, you get a lovely criispy outside, with a soft inside, without it getting tough. Perfect. Take that Old El Paso... $6.49 for a quesadilla kit? I can do better on my own!
